A maceration tank is a specialized vessel used to soak solid materials (such as grape skins, fruit pulp, or botanicals) in liquid to extract flavors, colors, tannins, and nutrients. In winemaking, maceration tanks play a critical role in enhancing wine body, aroma complexity, and color intensity.
The operating principle of a maceration tank is based on controlled solid–liquid contact to extract color, flavor, tannins, and aromatic compounds from raw materials such as grape skins, fruit pulp, or botanicals. The solid material is loaded into the tank and immersed in liquid, where it is held for a defined period under controlled temperature and time conditions. Temperature control jackets regulate heating or cooling to optimize extraction, while optional agitators gently mix the contents to ensure uniform contact and prevent settling. Throughout the process, parameters such as temperature, mixing intensity, and duration are precisely monitored, allowing consistent and repeatable maceration results before the solids are discharged and the liquid proceeds to the next processing stage.
Atmospheric maceration tanks operate at normal pressure and are suitable for standard extraction processes. Pressure maceration tanks are designed to withstand internal pressure and are often used for carbonic maceration or controlled anaerobic processes. Pressure-rated tanks can be built according to ASME or PED standards.
Stainless steel maceration tanks can be equipped with heating or cooling jackets that circulate hot water, chilled water, or glycol. This allows precise temperature regulation for cold maceration, warm extraction, or temperature-sensitive processes, ensuring stable and repeatable results.
